Espresso Marzipan Cupcakes ...


















... or: One should not praise the cupcake before the topping.

The recipe for the goodies you see above is again from my Dr. Oetker Cupcakes book. So far, so I'm always done well, this time I fell for the first time a little on the nose - well, I like to improvise.

But from the beginning. According to your recipe needed for self-Cakes:

Separate 2 eggs, beat the egg whites with the salt until stiff, then continue beating about 3 minutes while stirring under half of the sugar. Set aside.
The two egg yolks with the remaining sugar, marzipan and butter until fluffy, gradually add the third egg, espresso powder and sour cream and stir until smooth.

  • 3-4 teaspoon instant espresso powder
  • 2 tablespoons lukewarm water
  • 400g mascarpone
  • 100 ml of milk
  • 1 pack cream stabilizer
  • 100 g sieved powdered sugar
to dissolve the espresso powder in water and cool. The mascarpone until smooth
with the milk (whisk) and short until creamy. Powdered sugar and whip it and stir. Espresso also stir.

Warning: was with me the whole thing much too fluid and I needed more mascarpone and stir or extra cheese, so that the mass was sprayed. I would therefore reduce the milk or to give at least only in swallowing and lets see what happened.
