Sore Rear Knee Snowboarding

Christmas. A conclusion.

Sun This was my first Christmas in their own. So far I have allowed myself to cook and always had something to do rather little else these days (except eat, watch TV and open our presents), but eventually had indeed the Day will come when I am forced to grow up and do myself to watch that Christmas will be a success, especially on the culinary level.

bit helpless, I decided therefore, on Christmas Eve for potato salad and sausages:

(Not in the picture. The sausages)
Classic and above all, easy to make: Boil the potatoes (unpeeled), allow to cool slightly, then peel off. Cut into slices, 1 - 2 shallots, chop and add. The dressing consists simply of vinegar, oil, salt and Pepper. Simple, but perfect.

On Christmas Day there was (and will be today or the next 12 days, I fear) turkey with chestnut stuffing, red cabbage and potato dumplings:

We have not got any more baby turkey and had to be done with a 4.2 kg bird.
let this thaw, we first have him then rinsed with water and patted dry - and then remove the giblets bag, which has stubbornly and successfully hidden and almost got in the oven would be.
came in the turkey (seal with toothpicks then o. Ä.) Approximately 200 g chestnuts, salt, pepper and a piece of butter the outside of the bird was rubbed with butter, salted and peppered. Then pour about a cup of water over the turkey (and maybe again some butter into the water) and cook the roaster with the lid closed about 1.5 hours at 220 ° C can be.
then contact the turkey once again distribute 400 grams chestnuts around, again rub with butter, pour some water and place the roasting pan open about half an hour in the oven, then turn again (churning water,) and another Fry half an hour. The liquid
bind either the roasting pan - or not. I have left it, primarily out of laziness, but also because the law does not and we wanted to keep the food as possible schwiegermutternah. ;)

How do I make the red cabbage, I've recently already described. And the dumplings I make to this recipe:

500 g potatoes (floury) Peel
100 g wheat starch 1 egg yolk

1
butter salt, pepper, nutmeg

the potatoes and cook. Cool slightly, then mash, then spice. Starch, egg yolk and butter and knead the whole into a dough. If dough is too sticky, add a little strength - he is so tacky or anything, but one should reasonably can reasonably form dumplings, the best to do this with a slightly damp hands.
The formed dumplings into the sparkling, lightly salted water and wait until they rise by themselves, then they are cooked. It only takes a few minutes.

For dessert, I made a christmas tiramisu with amaretto biscuits and cherries :

But you needed:
  • 250g mascarpone
  • 250 g fat quark
  • 1 cup cream 1 jar cherries
  • 1 tablespoon cornstarch
  • 100g + 2 tablespoons sugar 1
  • Pk. Vanilla sugar, cinnamon
  • 1 pack of biscuits
  • 3 tablespoons (+ a little more for drizzling) Amaretto
  • any cocoa powder
First, let drain the cherries and the juice there.
mix 4 tablespoons of the juice and 1 tablespoon of starch that can juice with the remaining 2 tablespoons sugar and 3 tablespoons Amaretto boil, stir in the starch-juice mixture and cook the whole thing again a little. Stir in the cherries and all the cool . Let
cream until stiff. Quark, mascarpone, sugar, cinnamon and vanilla sugar mix, stir in cream.
In a baking dish or small bowl of the dessert now so stack up: First, a layer of mascarpone cream, then a layer of biscuits, sprinkle it with amaretto and top with the cherries. Finally, another layer of mascarpone cream, which is then decorated with cocoa powder and a biscuit.
can take a few hours!

was indeed all a bit tougher than I am used to at Christmas, but it still has a lot of fun and great taste. Could be repeated next year almost, actually. ;)
